Sometimes you have to reward yourself for the day before it even started. For example for falling out of bed at the right time in the morning after one week of summertime and two weeks of vacation. In my opinion this DOES justify icecrem for breakfast. Not any icecream of course, but one that supplies a lot of energy to you and your body. An ice cream on the basis of bananas and nuts. Exorbitantly healthy.
Ingredients For The Walnut-Banana Nice Cream
2 ripe bananas (cut into small pieces and frozen)
1 handful of cashews
1/2 handful walnuts (chopped)
1 pinch of cinnamon
1 tsp agave nectar
1 El cocoa nibs
Blend the frozen banana pieces and cashews. Add cinnamon and agave nectar and pulse again. Put the nice cream into a glas or bowl and top with the chopped walnuts and cocoa nibs. Serve immediately and enjoy the perfect spring breakfast!
