Quick & Dirty – Spaghetti with Vegan Cedar Nut Pesto

We all know these days, when the one and only answer to the question: “What do we do for dinner?” is: “Spaghetti!”

Spaghetti can be quickly prepared, taste fantastic and fill you up.

But: You shall NOT pour a bottle of ketchup over the pasta and call it dinner. There are definitely more classy ways for quickly preparing pasta.

Like this recipe for spaghetti served with a delicious cedar nut-pesto.

Ingredients (serves 4)

 500g spaghetti

150ml olive oil

50g fresh (or frozen) basil

5 garlic cloves

5 tablespoons nutritional yeast  flakes

5 tablespoons cashews

2 tablespoons cedar nuts

sesame seeds

Fill a large pot with cold water and bring it to a boil. Place the spaghetti into the boiling water and cook them for about 10 minutes until they are al dente.

Put all the other ingredients (besides the sesame seeds) into a blender and mix until it’s smooth.

Drain the spaghetti and carefully fold in the pesto. If you like, decorate with tomatoes and basil. Sprinkle some sesame seeds and serve immediately.
