A morsel before meal? Of course!
Appetizers like Bruschetta or these juicy puffs are ideal to prepare your stomach for the main course. ;-)
Vegan Puff Pastry with Spinach Filling
Ingredients (for 12 pieces)
6 vegan frozen puff pastry slices
1 tablespoon canola oil
1 small onion
250g frozen spinach
1 tablespoon cashew butter
2 tablespoons nutritional yeast
salt
pepper
nutmeg
Preheat your oven to 200 ° C and thaw the single puff pastry slices on a board.
Peel onion, chop finely and fry in oil. Put in the spinach and sauté for about 5 minutes. Add cashew butter and nutritional yeast and stir. Season with salt, pepper and a little nutmeg. Remove from heat.
Cut the puff pastry slices in 24 small squares (about 6 x 6 cm). Incise 12. Put the filling on half of the small squares and cap each with an incised one. Press together firmly at the edges.
Bake until your pastry is golden brown and puffed. This can take about 10-15 minutes.
Let the puffs cool for another 10 minutes and serve immediately.
By the way: Cold puffs taste wonderful as well and are therefore also suitable for a buffet or picnic
